Banana Cookies
Banana Cookies Preparation Time: 10 minutes
Cooking Time: 10 - 12 minutes
Serves: Makes about 16.
Banana Cookie Ingredients:
- 50g butter
- 2 tablespoons golden syrup or light corn syrup
- 1 medium banana, mashed
- 125g rolled oats
- 75g self-raising flour
- 25g caster sugar
- 1 medium egg, beaten
- 75g raisins
Equipment:
- Medium saucepan + wooden spoon
- 2 baking sheets lined with parchment paper
- Cooling rack
Method
- Preheat the oven to 160°C/350°F/ gas mark 4 and grease and line the two baking sheets with baking parchment.
- Melt butter and syrup in a saucepan over a low heat.
- Stir in the remaining ingredients in the order listed.
- Put tablespoons of the banana cookie mixture on the greased baking sheets and flatten slightly with a fork.
- Cook for 10-12 minutes until just golden.
- Cool the cookies on the baking sheet for 5 minutes and then transfer to a wire rack to cool completely.
