Banana Cookies

Banana Cookies Preparation Time: 10 minutes
Cooking Time: 10 - 12 minutes
Serves: Makes about 16.

Banana Cookie Ingredients:

cookies
  • 50g butter
  • 2 tablespoons golden syrup or light corn syrup
  • 1 medium banana, mashed
  • 125g rolled oats
  • 75g self-raising flour
  • 25g caster sugar
  • 1 medium egg, beaten
  • 75g raisins

Equipment:

  • Medium saucepan + wooden spoon
  • 2 baking sheets lined with parchment paper
  • Cooling rack

Method

  1. Preheat the oven to 160°C/350°F/ gas mark 4 and grease and line the two baking sheets with baking parchment.

  2. Melt butter and syrup in a saucepan over a low heat.

  3. Stir in the remaining ingredients in the order listed.

  4. Put tablespoons of the banana cookie mixture on the greased baking sheets and flatten slightly with a fork.

  5. Cook for 10-12 minutes until just golden.

  6. Cool the cookies on the baking sheet for 5 minutes and then transfer to a wire rack to cool completely.
