Totally Irresistible Caramel Popcorn Recipe

Yum, yum! Caramel popcorn always reminds me of the cinema when I was little. Now however we tend to watch movies at home so we have learned how to make popcorn with a caramel taste ourselves.

This popcorn recipe is really easy and tastes delicious. Little (and big) hands will just keep on coming back for more!

Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes about 4 Quarts

Equipment: Heavy 2-quart saucepan, wooden spoon, large shallow roasting pan

  • Cooking spray
  • 4 quarts popped popcorn
  • 1 cup brown sugar
  • 1/2 cup Light OR Dark Corn Syrup
  • 1/2 cup butter OR margarine
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon Pure Vanilla Extract

Note: If you have a popcorn machine or use microwave popping corn, both are fine to use with this recipe. Just skip the first steps below and go straight to the part about making the caramel.

How to Make Caramel Popcorn

  1. Spray large shallow roasting pan with cooking spray. Add popcorn and place in preheated 250 degrees F oven while preparing caramel.
  2. Mix brown sugar, corn syrup, butter and salt in a heavy 2-quart saucepan. Stirring constantly, bring to a boil over medium heat.
  3. Boil 5 minutes without stirring. Remove from heat. Stir in baking soda and vanilla; mix well.
  4. Pour syrup over warm popcorn, stirring to coat evenly.
  5. Bake for 45 minutes, stirring occasionally. Remove from oven and spread on foil that has been sprayed with cooking spray.
  6. Cool; break apart. Store in tightly covered container

Make this flavored popcorn at the next party you host for the kids and they will love it. 

It might not hurt to make some with just butter in case some of the kids don't like caramel.
