Bird's Nests
I just love these ultra cute birds nests. You could either make one large nest as a table centrepiece or a small one for each child.
Ingredients:
200gm milk chocolate cake covering
185gm dessicated coconut
1/2 tablespoon water
Small chocolate eggs or jelly beans
Wax/greaseproof paper
Baking sheet
Break up the chocolate into small pieces and melt either in the microwave on a low setting or place it in a bowl over a saucepan of simmering water. When fully melted, add the coconut and give it a good stir.
Add a couple of drops of water which helps the mixture harden. Allow to cool and then form into eight small balls and place on the wax/greaseproof paper. Using a spoon make an indent in the centre of each nest. If you are making one large nest, draw a circle outline on the paper first with a pencil so as to act as a guide.
Place the nest(s) in a cool place or fridge to set. When full set, lift carefully off the sheet and fill with small chocolate eggs or jelly beans.
Tip: Use cooking cholcate if you are in a warm climate as it moulds more easily and is less likely to melt in your hands.

Easter Biscuits
I just love this basic biscuit mix. Not only does it taste delicious but it can be used for any type of occasion by just changing the decorations and shapes of the biscuits.
Ingredients:
225g (8oz) plain flour
50g (2oz) caster sugar
125g (5oz) butter
1 small orange - grated rind and 1 tbsp. juice
Cookie cutters
2 Baking sheets
Icing sugar
Food colouring
Preheat the oven to 180C/350F/gas mark 4.
Put the flour and sugar in large mixing bowl. Cut butter into small pieces, then rub into the flour until mixture resembles fine crumbs. Stir in the orange rind and juice, then mould the mixture into a ball with your hands.
On a floured surface, knead the dough lightly. Roll our until 5mm (1/4 inch) thick, then stamp out your biscuit shapes. If you don't have the right cookie cutter, make a template with a piece of strong card.
Arrange the shapes slightly apart on 2 baking sheets and place in the oven for approximately 10 mins or until pale golden in colour. Allow to cool for a couple of minutes and then carefully loosen with a palette knife.
Now comes the really fun bit. Make up the icing by mixing some icing sugar with a little water and food colouring and then let your imagination run wild. Yummy!

Meringue Nests
A quick and easy Easter party desert treat.
Ingredients:
Bought meringue nests
Double or whipping cream
Small fresh berries eg blackcurrants,
Simply fill each meringue nest with whipped cream and top with fresh berries. If you want a REALLY sweet desert, you could add some small chocolate eggs or mini marshmallows amongst the berries.

Chocolate frosting
Mini Choclate eggs
Make some cupcakes. When cool, cover with chocolate frosting. Make sure it looks a bit rough like a birds nest. Top with a few chocolate eggs in the center. Simple and stunning!
