Melting Moments

Melting Moments are are perfcet cookie to serve at a kids birtday party. These cookes are so easy to make and can be made a few days in advance. The are also a great recipe for kids to make.

Preparation Time : 20 minutes

Cooking Time : 15-20 minutes

Serves : Makes 24 biscuits

Equipment : Large mixing bowl, wooden spoon/electric mixer, fork, baking sheet, sieve, cooling rack.

Ingredients

115g butter or margarine
85g sugar
Few drops of vanilla essence or grated lemon rind
1 medium egg yolk
140g self-raising flour (sifted)
Optional : 2 cups Crushed Cornflakes
To Finish : Melted chocolate or icing sugar.

Method

Preheat the oven to 190°C/375°F/ gas mark 5. Grease a large baking sheet.
Cream the fat and sugar and beat in the flavoring and the egg yolk.
Using a fork, gradually work in the sifted flour and then mould in to a dough with your hands.
Divide the mixture into small balls (and roll in the crushed Cornflakes if using).
Place the balls on the baking sheet and flatten slightly with the palm of your hand or the back of a fork.
Cook in the center of the oven for 15-20 minutes.
When cooked, cool on the tray for 5 minutes before transferring to a wire cooling rack.
When completely cool, drizzle with melted chocolate or dust with icing sugar.
