Melting Moments
Melting Moments Preparation Time : 20 minutes
Cooking Time : 15-20 minutes
Serves : Makes 24 bicuits
Melting Moments Ingredients :
- 115g butter or margarine
- 85g sugar
- Few drops of vanilla essence or grated lemon rind
- 1 medium egg yolk
- 140g self-raising flour (sifted)
- Optional : 2 cups Crushed Cornflakes
To Finish :
- Melted chocolate or icing sugar.
Equipment :
Large mixing bowl, wooden spoon/electric mixer, fork, baking sheet, sieve, cooling rack.

Method :
- Preheat the oven to 190°C/375°F/ gas mark 5. Grease a large baking sheet.
- Cream the fat and sugar and beat in the flavouring and the egg yolk.
- Using a fork, gradually work in the sifted flour and then mould in to a dough with your hands.
- Divide the mixture into small balls (and roll in the crushed Cornflakes if using).
- Place the balls on the baking sheet and flatten slightly with the palm of your hand or the back of a fork.
- Cook in the centre of the oven for 15-20 minutes.
- When cooked, cool on the tray for 5 minutes before transferring to a wire cooling rack.
- When completely cool, drizzle with melted chocolate or dust with icing sugar.
