Melting Moments

Melting Moments Preparation Time : 20 minutes
Cooking Time : 15-20 minutes
Serves : Makes 24 bicuits

Melting

Melting Moments Ingredients :

  • 115g butter or margarine
  • 85g sugar
  • Few drops of vanilla essence or grated lemon rind
  • 1 medium egg yolk
  • 140g self-raising flour (sifted)
  • Optional : 2 cups Crushed Cornflakes
  • To Finish :

  • Melted chocolate or icing sugar.

Equipment :

Large mixing bowl, wooden spoon/electric mixer, fork, baking sheet, sieve, cooling rack.

Method :

  1. Preheat the oven to 190°C/375°F/ gas mark 5. Grease a large baking sheet.
  2. Cream the fat and sugar and beat in the flavouring and the egg yolk.
  3. Using a fork, gradually work in the sifted flour and then mould in to a dough with your hands.
  4. Divide the mixture into small balls (and roll in the crushed Cornflakes if using).
  5. Place the balls on the baking sheet and flatten slightly with the palm of your hand or the back of a fork.
  6. Cook in the centre of the oven for 15-20 minutes.
  7. When cooked, cool on the tray for 5 minutes before transferring to a wire cooling rack.
  8. When completely cool, drizzle with melted chocolate or dust with icing sugar.
