This recipe for Rice Krispie Squares is so easy. Kids love them and adults do too! 

They are soft, sweet and one is just never enough.....so make plenty!

They make a great kid's party food and are usually the first thing to be finished. Plus they are a great way to use up leftover rice krispies that might be going a bit stale.

Ingredients for Rice Krispie Squares

Preparation Time: 15 minutes
Makes about 16 squares

Equipment: Saucepan, wooden spoon, Swiss roll tin,

  • 3 tablespoons butter or margarine
  • 4 cups mini marshmallows (approx 280gm)
  • 6 cups Rice Krispies
  • To Finish: chocolate for coating (optional)

How to Make These Rice Krispie Treats

  1. Lightly grease a Swiss roll tin. 
  2. First melt the butter or margarine over a low heat. Then add the marshmallows and stir till melted. Keep the heat low whilst doing this as the mix can easily burn.
  3. Remove from the heat and add the Rice Krispies and mix well.
  4. Spoon into the Swiss roll tin and press down with the back of the spoon.
  5. Leave to cool and then cover with the melted chocolate (optional).
  6. Cut into slices or 2 inch squares. 
  7. These rice krispie cakes keep for up to two days at room temperature in an airtight container.

Fun Idea : You could also decorate these with smarties or choc chip shavings.

Time Saver: You can freeze these squares for up to 6 weeks. Make sure you separate the layers with grease-proof paper as otherwise they will stick together.

When you are ready to eat them, let them sit at room temperature for 15-30 minutes before serving.

Peanut Butter Rice Krispie Treats

If none of the kids have any allergies, try adding 1/2 cup of peanut butter to the melted marshmallows or make 2 batches. One with peanut butter and one without.

The kids will love the peanut butter flavor.
