Toffee Popcorn

Toffee Popcorn Preparation Time: 5 minutes
Cooking Time: 10 minutes
Serves: Makes enough to fill 1.5 litre bowl.

Popcorn Ingredients:

  • 75g popcorn kernels
  • 2 tbsp sunflower oil

For The Toffee Part:

  • 40g brown sugar
  • 2 tbsp golden syrup
  • 40g Butter
  • 1 pinch Salt

Equipment:

  • Large heavy based saucepan with a tight fitting lid
  • Wooden spoon
  • Small saucepan
  • Baking sheet

Method

  1. Heat the oil in the large saucepan until just starting to bubble.
  2. Add all the popcorn and give the pan a quick swirl to coat all the popcorn kernels
  3. Put on the lid, turn the heat down low and let the popcorn pop away!
  4. As soon as you don't hear any popping sounds for 5 seconds, immediately turn off the heat.
  5. Now for the toffee bit - Melt the butter in the smaller saucepan and then add the other toffee ingredients.
  6. Give it a good stir and then let it gently bubble for 1 - 2 minutes. Watch it carefully as it can turn from golden to burnt in a split second!
  7. Pour the toffee mix over the cooked popcorn, give it a good stir and then tip it onto the baking sheet.
  8. Allow it to fully cool.
  9. Eat!
