This Ultimate Chocolate Cake recipe is a bit more complicated than the All-in-one cake but it has fabulous results.
My family are chocolate cake addicts and try as I might to introduce them to other flavors, chocolate is always voted the top! This chocolate cake recipe I use when I have time and feel like being a bit indulgent.
Grease a 20cm (8 inch) round cake tin and line the base with grease proof or silicone paper (also greased).
Break the chocolate into a heat proof bowl and let it stand over a saucepan of simmering water until it is melted. You could use a microwave but have the power on very low so as not to burn the chocolate.
Cut the butter into small pieces and add the butter and water to the melted chocolate. Stir until the butter has melted. Let cool for 10 minutes.
Separate the eggs into two large bowls - egg whites in one bowl and the egg yolks in another. Tip the sugar into the egg yolks and whisk together until thick and creamy.
Stir the chocolate mixture into the egg yolk mixture and then add the ground almonds. Sift in the flour and mix well.
Whisk the egg whites till they form soft peaks then fold them into the chocolate mixture.
Put the mixture into the tin, level off with a spoon and then bake in the oven for 40-45 minutes.
Cool in the tin for 5 minutes then remove from the tin and leave to cool on a wire rack.
Note: when this cake comes out of the oven, it has a gooey chocolate center which sets as it cools.
For the topping: Melt the chocolate as before. Remove from the heat and stir in the soured cream. Spread over the cooled cake and decorate. You could use flaked almonds, chocolate vermicelli, fruit or whatever suits the occasion.
