Ultimate Chocolate Cake Recipe
This Ultimate Chocolate Cake recipe is a bit more complicated than the All-in-one cake but it has fabulous results.
Ingredients:
175g of fine dark chocolate
115g butter
3 tablespoons water
3 eggs
140g caster sugar
85g ground almonds
55g self-raising flour (sifted)
pinch of salt. To Finish:
115g dark chocolate
two tablespoons soured cream
flaked almonds or chocolate vermicelli.
Method:
Set the oven to 190°C/375°F/gas mark 5. Grease a 20cm (8 inch)round cake tin and line the base with greaseproof or silicone paper (also greased).
Break the chocolate into a bowl and let it stand over a saucepan of simmering water until it is melted. You could use a microwave but have the power on very low so as not to burn the chocolate.
Cut the butter into small pieces and add the butter and water to the chocolate and stir until the butter has melted. Separate the eggs into two large bowls. Whisk the egg yolks and sugar together until they are thick and creamy.
Stir the chocolate mixture into the egg yolk mixture and then add the ground almonds. Sift in the flour and mix well.
Whisk the egg whites till they form soft peaks then fold them into the chocolate mixture.
Put the mixture into the tin and bake for 40-45 minutes.
Cool in the tin for 5 minutes then remove from the tin and leave to cool on a wire rack.
Note: when this cake comes out of the oven, it has a gooey chocolate centre which sets as it cools.
For the topping: Melt the chocolate as before. Remove from the heat and stir in the soured cream. Spread over the cooled cake and decorate with flaked almonds or chocolate vermicelli.
