This gingerbread cookie recipe is so easy yet delicious too. If you're looking for a cookie recipe that the kids can do then this is a perfect choice.
Play around with the quantities of the spices and also decorate the gingerbread to suit the occasion. We made lots last Christmas to sell at our Christmas bazaar and dressed the gingerbread men in festive green scarves and red smartie buttons and they were a huge hit.
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Makes about 10 - 15
Large mixing bowl, wooden spoon, teaspoon, baking tray, rolling pin, cling film or plastic bag
Icing and Decoration Ingredients : Icing sugar, Lemon juice or water, Food coloring, Smarties /currants
To Make the Icing :
Mix some icing sugar with a little lemon juice or water to form a smooth but not runny icing. Add coloring if you want. Then decorate the gingerbread cookies how you wish. I like to make eyes with small smarties 'glued' on with a blob of icing and then add colored icing blobs for buttons.
