Kid party cake recipes



"I worried about the kids party food
until I saw your website."

The kid party cake is probably going to be the center piece of the party food table.

When it comes to the cake you have 2 options: buy it or make it. There are some fantastic ready made cakes but sometimes it is nicer (and cheaper) to make your own.

The following recipes are for a basic cake mix. Recipe #1 All-in-one Cake
is my favorite and it can be used for any shape and size cake pan. Just remember to adjust the quantities.

    #1 All-in-one basic kid party cake (18 cm/7 inch round cake)

    cupcakes This has got to be the easiest kid party cake recipe in the world. Everything just gets put in the bowl all at once, mix it up, cook it and you have a great cake or mini cupcakes.

    This cake forms the basis for all my kids birthday cakes and you can adjust the quantities for whatever tins you are using - square, shaped, cup cakes etc.

    Ingredients:
    110g self-raising flour (sifted); 1 teaspoon baking powder; 110g soft margarine or butter at room temperature; 110g caster sugar; 2 large eggs; 2-3 drops of vanilla essence.

    To finish: icing (confectioners) sugar, jam or frosting

    Method:

    1. Preheat the oven to gas mark 3, 325°F (170°C). Grease and line two 18 cm (7 inch) sandwich tins with greaseproof or silicone paper (also greased).
    2. Sift the flour and baking powder into a large bowl then add all the other ingredients. Mix well, preferably with an electric hand mixer. If the mixture doesn't fall off a wooden spoon easily when tapped on the side of the bowl, then add 1-2 teaspoon of warm water. Mix again.
    3. Divide the mixture evenly between the two cake tins, level off and bake on the centre shelf of the oven for 25-30 minutes. Do NOT open the oven whilst the cake is rising.
    4. To test if the cake is cooked, insert a knife in the centre of one of the cakes. If it comes out clean, the cake is ready. Leave to cool on a wire rack for a couple of minutes then slide a knife all round the inside of the cake tine, tip the cakes out on to the wire rack and leave to cool completely.
    5. When cool, peel off the paper, and sandwich with the filling of your choice.
    6. Note: You can vary this cake mixture by omitting the vanilla essence and adding one of the following: two tablespoons of cocoa powder; the grated rind of a lemon or orange plus 2 tablespoons of juice; one tablespoon of instant coffee mixed with one dessertspoon of hot water.

    #2 Ultimate Chocolate cake (20 cm/8 inch round cake)

    This kid party cake is a bit more complicated than the All-in-one cake but it has fabulous results.

    Ingredients:
    175g of fine dark chocolate; 115g butter; 3 tablespoons water; 3 eggs; 140g caster sugar; 85g ground almonds; 55g self-raising flour (sifted); pinch of salt.

    To Finish: 115g dark chocolate; two tablespoons soured cream; flaked almonds or chocolate vermicelli.

    Method:

    1. Set the oven to 190°C/375°F/gas mark 5. Grease a 20cm (8 inch) cake tin and line the base with greaseproof or silicone paper (also greased).
    2. Break the chocolate into a bowl and let it stand over a saucepan of simmering water until it is melted. You could use a microwave but have the power on very low so as not to burn the chocolate.
    3. Cut the butter into small pieces and add the butter and water to the chocolate and stir until the butter has melted. Separate the eggs into two large bowls. Whisk the egg yolks and sugar together until they are thick and creamy.
    4. Stir the chocolate mixture into the egg yolk mixture and then add the ground almonds. Sift in the flour and mix well.
    5. Whisk the egg whites till they form soft peaks then fold them into the chocolate mixture.
    6. Put the mixture into the tin and bake for 40-45 minutes.
    7. Cool in the tin for 5 minutes then remove from the tin and leave to cool on a wire rack.
    8. For the topping: Melt the chocolate as before. Remove from the heat and stir in the soured cream. Spread over the cooled cake and decorate with flaked almonds or chocolate vermicelli.
    9. Note: when this cake comes out of the oven, it has a gooey chocolate centre which sets as it cools.

    #3 No-cook Fudge Cake (2-cup capacity oblong loaf pan)

    Don't want to use the oven? Well this is the kid party cake for you. My kids love it and it's my husband's favorite. It's very moreish and very rich.

    Ingredients:
    110g butter; 2 tablespoons golden syrup (light corn syrup); 220g crushed sweet biscuits; 30g seedless raisins; 2 tablespoons glacé cherries, quartered; 145g plain chocolate squares, chopped.

    To Finish (Fudge Icing): 55g plain (bitter) chocolate; 30g butter; 3 dessertspoons water; 175g icing (confectioners) sugar; extra icing sugar and chocolate to decorate (optional).

    Method:

    1. Grease and line the base of a 16oz loaf tin (2-cup capacity oblong loaf pan) with a piece of buttered foil or Clingfilm (I prefer Clingfilm as it comes off easier).
    2. Melt the butter and syrup in a saucepan and stir in the crushed biscuits. I bash the biscuits in a double plastic bag with a rolling pin but be careful not to over bash as you want them to be in small pieces rather than crumbs. Stir in the fruit and chopped chocolate (again I bash this with a rolling pin whilst still in its wrapper).
    3. Press firmly into the tin and leave to cool till set.
    4. To Finish: Melt the chocolate and butter with the water over a basin of hot water. You could use a microwave but have the power on very low so as not to burn the chocolate.
    5. Remove from the heat and stir in the sifted icing sugar and beat until cool and thick.
    6. Remove the cake from the tin, peel off the silver foil or Clingfilm and cover with the fudge icing. Lightly dust with sieved icing sugar and grated chocolate. Delicious but very rich!

    Party cake tins

    If you are having a party theme, why not make the shape of the cake tin to match the theme and then use ready to roll icing to decorate. Don't make the decoration too complicated and then you will have a no fuss cake that looks really special.

    It really is that simple.

    Why spend loads of money on a cake tin that you might only use once? Ebay often have some excellent bargains.
